Ingredients
3lb bag baby or fingerling potatoes
2Tbspolive oil
2tsp dry Ranch seasoningdivided
2Tbspbutter
salt and pepper to taste
Instructions
In a mixing bowl, coat the baby or fingerling potatoes in the olive oil. Sprinkle half of the Ranch dressing mix over the top and toss. Transfer to the air-fryer basket.
Air fry at 400 F for 10 minutes, or until all potatoes are fork tender.
Transfer the potatoes to a large platter or baking mat. Using a flat spatula, press down to flatten the potatoes. Return the potatoes to the air-fryer basket, in a single-ish layer.
Air fry at 400 F for 3 minutes. While in the air fryer, melt the butter and mix in the remaining Ranch dressing mix.
Transfer the twice air-fried potatoes to a serving dish and drizzle the butter-Ranch over the top. Enjoy as a side dish with your favorite chicken, beef or sausage.
