Preheat oven to 350 F. Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
Pour both cans of the apple pie filling into the baking dish and spread into an even layer.
In a mixing bowl, add the cookie mix and cinnamon-sugar mix. Add the egg and softened butter. Mix well until hearty dough forms.
Flatten the dough into discs and place on top of the apple pie filling in the baking dish, spreading into an even layer. It will not completely cover the apple pie filling, but it will fill in as it bakes.
Bake in the preheated oven for 50 to 55 minutes, or until the cobbler top begins to golden.
Remove from oven, let cool slightly before serving warm with vanilla ice cream or whipped topping. Enjoy!
