Ingredients
1lb.ground beef
1 Tbsp minced onion
1tspgarlic powder
15oz.can corn
1mediumred bell pepperseeded and chopped
1/2cupketchup
1/2cup beef broth or water
1bagtortilla chips
1cupshredded cheddar or pepper jack cheese
2cupsprepared instant mashed potatoesgarnished as dollops
sour cream dollopsgarnish
Instructions
In a large skillet, brown the ground beef with the minced onion and garlic. Drain if needed.
Stir in the corn and chopped red bell pepper and saute for 2 to 3 minutes. Stir in the ketchup and broth/water and combine together. Let simmer another 2 to 3 minutes.
Set chips out onto individual plates and then top with the meat and veggie mixture. Cover the meat with shredded cheese and let it melt, or microwave it for 40 seconds to melt the cheese.
Top the nachos with dollops of prepared mashed potatoes - leftovers or instant for convenience. Add a few dollops of sour cream too.
Serve Shepherd's Pie Nachos as is, or with side salad or veggies. Enjoy!
