Preheat the oven to 400 F. Lightly grease a 12-muffin well pan with non-stick cooking spray.
In a skillet, brown the sausage with the onion and chopped bell peppers.
In a large mixing bowl, whisk together the pancake mix, water and maple syrup. Once the batter is smooth, fold in the sausage-bell peppers and the shredded cheese. Combine until batter forms.
Transfer the batter into the prepared muffin pan.
Bake in the preheated oven for 15 to 18 minutes, or until golden brown on top and a fork comes out clean from the middle muffins.
Let cool slightly before serving warm, as is or with butter. Enjoy!
