Mango Overnight Oats

Equipment

Ingredients 

  • 2 cups rolled oats
  • 1 bag freeze dried mango, crushed or chopped dried mango
  • 1 cup coconut water
  • 1 cup mango nectar

Instructions

  • To each of the 4 oz. glass jars, add 1/4 cup rolled oats.
  • Crush the freeze dried mango and add a few pinchfuls onto the oats.
  • In a liquid measuring cup, combine the coconut water and mango nectar, stir gently.
  • Pour the liquid into each of the jars, covering the oats and mango. Leave a little space on the top for the oats to expand. If needed, make another 1/2 to 1 cup of the same even amounts of coconut water and mango nectar to fill all of the jars.
  • Give each jar a slight stir with a spoon or knife to make sure all of the oats and mango are "underwater."
  • Put the lids on the jars and place in the refrigerator overnight, or for at least 2 hours before eating. Refrigerate up to 5 days.
  • Served chilled for breakfast or snack.
