Eggroll Skillet Dinner

Quick and Flavorful Dinner: All the Tasty Goodness of an Eggroll in One Skillet!

Ingredients 

  • 1 lb. ground beef
  • 1 Tbsp minced onion
  • 1 tsp garlic powder
  • 12 oz. bag Coleslaw mix
  • 1 cup sweet and sour sauce
  • 2 cups brown rice side dish
  • sliced green onions garnish

Instructions

  • Cook the brown rice, as directed, for a side dish.
  • In a large skillet, brown the ground beef in the skillet with the minced onion and garlic powder. Drain, if needed.
  • Once browned, stir in the Coleslaw mix and saute over medium high heat for 3 to 5 minutes. Then stir in the sweet and sour sauce and combine with the meat and veggies. Saute for another 3 to 5 minutes, or until all the veggies have softened. Remove from heat once cooked.
  • Serve Eggroll Skillet over brown rice, with green onion slices as garnish. Enjoy!
