Quick Tater Tot Egg Bites: The Perfect Anytime Breakfast, Brunch or Snack!

Tater Tot Egg Bites
Love these tater tote egg bites - they make the perfect breakfast, brunch or snack!
Servings - 12 egg bites
Ingredients
- 36 frozen tater tots
- 1 medium bell pepper seeded and chopped
- 10 large eggs
- 1/2 cup milk
- 1 tsp garlic powder
- 1 cup shredded cheese
- salsa, sour cream, or pico de gallo optional toppings
Instructions
- Preheat the oven to 375 F. Generously spray a 12-well muffin tin pan with non-stick cooking spray.
- Add 3 frozen tater tots into each muffin tin well.
- Seed and chop the bell pepper and sprinkle a few pieces in with the tater tots.
- In a large mixing bowl, whisk together the eggs, milk and garlic powder. Pour evenly into each muffin tin well, leaving about 1 cm of space for the eggs to rise. Add a pinchful of shredded cheese onto each egg bite.
- Bake in the preheated oven for 20-25 minutes, or until begin to brown on top and the egg bites in the center have fully set. Let cool slightly before loosening from the wells and serving as is, or with toppings.
- Serve Tater Tot Egg Bites for breakfast, brunch or snack with some fresh fruit. Enjoy!
- To FREEZE: Let cool completely, then place on a baking sheet and place in the freezer for 2 hours. Once frozen, transfer to container. To REHEAT: Defrost and reheat in the microwave. Or thaw overnight in the fridge, and reheat in oven or microwave.
