Slow Cooker Root Beer Chicken

Servings - 8 sandwiches
Ingredients
- 3 large boneless, skinless chicken breasts trimmed
- salt and pepper
- 12 oz. can root beer divided
- 1 cup bourbon flavored BBQ sauce
- 2 Tbsp minced dried onion or 1/4 cup finely chopped white onion
- 8 sandwich buns
- sliced cheddar cheese optional sandwich topping
- pickle optional sandwich topping
- fresh veggies or salad as side dish
Instructions
- Place the chicken breasts into the base of the slow cooker and sprinkle a few pinches of salt and pepper over the top. Pour half of the root beer can into the slow cooker.
- In a mixing bowl, whisk together the BBQ sauce and remaining root beer. Stir in the minced onions. Pour the sauce over the top of the chicken in the slow cooker.
- Set on low and cook for 8 hours, or high for 4 hours. Once cooked, shred the chicken and combine with the sauce from the slow cooker, make the chicken as "saucy and sloppy" as you like.
- Spoon the shredded chicken onto the sandwich buns, with optional slices of cheese, pickles and more BBQ sauce.
- Serve Slow Cooker Root Beer Chicken on sandwich with fresh veggies or side salad.
