I {big puffy beating heart} love enchiladas.
Love, love, love them!
Whenever we visit tex-mex spots for dinner around here…I get enchiladas. I eat the enchies, and Cuatro eats the rice and beans. (He’s almost big enough for his own kids’ meal…but I’m not almost ready to have to pay for another kids meal!!!)
I love making them at home because there are so many great ways to make them (as evidenced below), and they are super cheap…especially when cooking for a crowd like mine! (Yes, we do have some dairy-intolerant folks in our home and I will often just add cheese to the top of half of the dish. I try to avoid adding cheese inside the enchiladas, but sometimes it’s necessary.)
I also love the enchiladas are freezer friendly and will often prep 2-3 trays at once…one to eat now and another for the freezer. Generally, 1 rotisserie chicken will yield enough chicken for 2 – 9×13-inch trays of enchiladas for me. So to save time and some sanity, I double up and make 2 trays at once!
