I absolutely, positively, without a doubt adore one-dish dinners. (I even wrote an entire cookbook around one-dish dinners.)
They are my sanity savers. They help me through the witching hour. They are easy on the post-meal elbow grease. And this one in particular is T.A.S.T.Y!
Chicken, red potatoes and carrots. Add a drizzle of homemade maple-mustard sauce. Roast. (If you are eating the Paleo diet, please use sweet potatoes in place of the red potatoes.)
