Rice & Beans Yellow Curry
This vibrant Rice & Beans Yellow Curry is a delicious and comforting fusion dish that combines the warmth of traditional yellow curry with the hearty flavors of rice and beans.
Servings - 8 servings
Ingredients
- 1 red bell pepper seeded and chopped
- 1 orange bell pepper seeded and chopped
- 1 small white onipon chopped
- 2 15 oz. cans black beans drained and rinsed
- 2 cups white rice
- 16 oz. jar yellow curry sauce
- 1 15 oz. can coconut milk
- 1 cup vegetarian or chicken broth
- 1/4 cup lime juice
- 1 tsp minced garlic
- 1 Tbsp curry powder
- Salt and pepper to taste
Instructions
- In a large saucepan or Dutch oven, saute the chopped bell peppers and onion in 1 Tbsp oil. Once translucent, stir in the black beans and white rice (uncooked).
- Quickly stir in the curry sauce, coconut milk, and broth. Stir in the lime juice. minced garlic, and curry powder next. Whisk together and cover with lid. Bring to bubbling, then reduce heat to medium low and simmer for 20 minutes to allow rice to cook. Turn off the heat once the rice is tender. Season with salt and pepper to taste.
- Serve Rice and Beans Yellow Curry as a one dish dinner, or with your favorite side salad or veggies.
