Rhubarb? Not sure what to do with it? You definitely need to make these Rhubarb Dream Bars!
My mom LOVES rhubarb anything.
When I came across this Rhubarb cookbook (in a Facebook group, I think), I wanted to get my hands on one.
PROBLEM BEING…
They were out of print and very difficult to find.
And a friend pinged me to let me know that a small community center was doing another print one, and managed to get a few copies ordered.
I’ve been making my way through the recipes in the cookbook and ADORE this one.
They are very much like lemon bars. But with rhubarb on top.
And they are DELIGHTFUL.
Here’s how to make them…
How to Make Rhubarb Dream Bars
Mix up the base on a large mixing bowl.
Cut in the butter with pastry blender or two knives.
Pour the crumbles into the base of a dish.
Press into the base with bottom of measuring cup to flatten and even it out.
Bake in the oven.
While the crust is baking, mix up the topping.
Whisk away.
Whisk in the flour.
Fold in the frozen or fresh cut rhubarb.
Remove baked crust from oven, and pour the topping over the top.
Spread the topping out…
And return to oven to continue baking.
Remove from the oven and let cool completely before cutting and serving!

Rhubarb Dream Bars
Ingredients
Crust
- 2 cups flour
- 3/4 cup powdered sugar
- 1 cup butter
Filling
- 4 eggs
- 2 cups sugar
- 1/2 cup flour
- 1/2 tsp salt
- 4 cups rhubarb diced
Instructions
Crust Instructions
- Combine flour and sugar. Cut in butter until crumbs form.
- Press into 15x10 pan.
- Bake in 350 oven for about 15 minutes.
- While crust is baking, prepare filling.
Filling Instructions
- Blend eggs, sugar, flour and salt until smooth.
- Fold in the rhubarb.
- Spread over hot crust and bake in 350 oven for 35-40 minutes, or until filling is lightly browned.
- Cut into bars when cool.
