I adore these kinds of “frugal gourmet” kinds of meals. Loads of flavor – different from my normal “cooking method” – but still super easy to put together!
You could totally make this by adding the “relish” at the beginning of the slow cooking time, but I prefer to have a little ‘crunch’ left in my apples with a relish-topping like this. If you plan to add the apples at the beginning of the slow cooker cycle, I would soak them in some lemon water (2 cups water, 1 Tbsp lemon juice) to help cut down on the oxidation and browning. They will still have the same great flavor, but might be a bit brown after slow cooking the day away.
I’ve written this recipe to make the “relish-topping” just before dinner. It takes a few minutes for everything to simmer. Just start it, get a favorite veggie prepared for a side dish and you’ll have a quick and easy dinner!
Slow Cooker Pork Roast with Apple Relish
Ingredients
- 3 lb. pork shoulder roast or pork tenderloin
- 1/4 cup + 1 tsp apple cider vinegar
- 1 Tbsp minced onion
- 1 tsp garlic powder
- 4 small apples, peeled, cored and diced
- 1 cup dried cranberries
- 1 Tbsp minced onion
- 1/2 tsp ground ginger
- Garnish: chopped walnuts
- Fresh veggies, as side dish
Instructions
- Place the pork roast in slow cooker with 1 tsp apple cider vinegar, minced onion, garlic powder. Set on low and cook for 8 hours.
- (Important Note: if your slow cooker runs hot, add about 1/2 cup water to the base of your slow cooker.)
- About 20 minutes, before serving time, add the diced apples, 1/4 cup apple cider vinegar, dried cranberries, minced onion, ground ginger to small saucepan and bring to bubbling. Reduce heat and simmer for 15 minutes, or until serving time.
- Slice or shred the pork roast and serve with hefty spoonful of apple relish on top.
- Prepare veggies or other sides.
