My youngest eats 100% gluten-free due to severe food allergies. I’m always on the hunt for ways to hack the costs of eating exclusively gluten-free and most recently, I’ve been tackling breakfast!
He loves oatmeal and I’ve started to make his “instant oatmeal mix” in big batches.
He will eat this like a typical instant oatmeal packet for breakfast, and sometimes I will add this mix in with milk and yogurt in the fridge overnight to make “overnight oats.”

Gluten Free, Dairy Free Instant Oatmeal Mix
Servings - 6 meals worth
Ingredients
- 3 cups certified gluten free oats rolled or quick cook
- 1/4 cup brown sugar or sugar alternative
- 2 Tbsp coconut milk powder or other dried milk if not dairy-free
- 1/8 tsp cardamom
- 1 cup freeze dried strawberries (or other freeze dried fruit) crushed
- water to cook
- milk or yogurt to garnish
Instructions
- If needed, pulse the rolled oats in a blender to break them up into smaller pieces.
- To a quart size glass jar, add 3 cups of gluten free oats with the brown sugar, coconut milk powder, cardamom and freeze dried fruit. Gently combine with a knife, incorporating all the ingredients together. Seal with the lid. Store in the pantry up to 2 weeks.
- To cook: add 2/3 cup dry gluten free instant oatmeal mix to a bowl with 2/3 cup of water. Microwave for 1 minute, stir to combine. Add milk or yogurt to cool it down. Enjoy!
