French Onion Meatloaf
Ingredients
- 2 medium white onions chopped
- 3 Tbsp olive oil
- 1 tsp white sugar
- 2 lbs. ground beef
- 2 large eggs
- 1 Tbsp Worcestershire sauce
- 1/2 cup bread crumbs
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/2 tsp salt and pepper each
- 1/2 cup shredded mozzarella cheese
Instructions
- In a large skillet, caramelize the chopped onions in the olive oil and sugar over medium low heat for 30 minutes. While the onions are caramelizing, prepare the meatloaf.
- Preheat the oven to 375 F. Lightly grease a 9x5-inch loaf pan with non-stick cooking spray.
- In a large bowl, combine the ground beef, eggs, Worcestershire sauce, bread crumbs, garlic powder, dried thyme, salt and pepper. Fold in the shredded cheese. If needed, place into the fridge while you wait for the onions to finish.
- Once the onions are finished caramelizing, mix them into the prepared meatloaf. Transfer the meatloaf into the prepared baking dish.
- Bake in the preheated oven for 55 to 60 minutes, or until meatloaf is cooked through.
