I don’t know about you – but going from the relaxed ‘schedule’ of summer and late nights and quasi-bedtimes to being forced back onto the school routing is just plain daunting. I’m not sure if it’s the ginormous pile of papers that come home that first week of school and 87% of them need to be filled out or signed. And then you have to turn your “but I still just wanna be laying out by the pool” brain onto high gear so that you make sure to get the right papers into the right kids’ folders. There is only 1 way that I know how to survive this madness. Freezer meals.
While they are a regular part of our routine and meal plan throughout the year…they become a daily part of the meal plan. Whether it’s a grab n go breakfast, or a slice of frozen zucchini bread that I drop into lunchboxes, or starting a freezer to slow cooker meal before whisking everyone off for a day of learning and work.
Every, single day…for the rest of August (and probably into September)…I will be pulling something out of the freezer.
It’s how I stay sane and “one step ahead” of these 4 bottomless pits that never stop eating. (Or so it seems this way.)
In order to help encourage, inspire and educate you on the benefits and how-tos of freezer cooking, I’ve come up with a list. Because lists help. They just do.
