Alrighty, friends. One of my absolute favorite kitchen and cooking hacks is “one-dish dinners”…where you make the entire meal all in the same dish, or slow cooker or all on the grill. You can make so many amazing and tasty meals all in one-dish. (I have an entire One Dish Dinners cookbook devoted to these time and money saving meals!)
This is a “dump and simmer” stew that’s rich in nutrients and flavor. It’s loaded with protein and veggies, including butternut squash.
I know it’s not butternut squash season, but you’ll wanna bookmark or pin this for the fall.

P.S. You could totally make this in the slow-cooker (low for 8 hours), and if you can’t find any fresh butternut squash in your stores right now, then you can absolutely use frozen, pre-cut butternut squash!
