Chicken and Spinach Quesadillas seem to be the perfect dinner. I love chicken. I love spinach. I love tortillas. And cheese, oh how I love thee. (I miss cheese. It won't be long until I get to rekindle my relationship with cheese. Story is, I suspect Tyler has a dairy intolerance, so I don't eat much of it these days.) Put it all together...and … [Read more...]
Chickpea Tuna Salad
This is a protein rich meal or side dish. Also, I'm not a HUGE fan of tuna without mayonnaise or sandwich spread mixed with it...too "fishy" for me. But this didn't leave me feeling fishy after eating it. The lemon juice, dill and other flavors made the un-mayonized tuna totally edible. And I actually ended up kinda liking it. (Perhaps I'm turning over a new tuna … [Read more...]
Spicy Bean and Cheese Tacos
2 words. Taco Cabana. I sorta had a little Taco Cabana addiction when I was in high school. At lunch, we would race to see who could get off campus and down Nacogdoches to the closest T.C. and get their chips and queso order in first! First to the table won!!! Bean and Cheese Tacos were always a fave then too. Today, I prefer them a bit spicier. These will kick up the … [Read more...]
Cranberry Chicken Salad Sandwiches
I love me some chicken salad. I like to eat it out of the bowl. I like it on sandwich bread. I like it on croissants. I like it on hamburger buns. I like it in tortillas. And I like it sweet. While the plain mayo with some celery and salt and pepper is o-kay, my sweet tooth would rather there be some fruit mixed in, whether it's pineapple, grapes, or in this … [Read more...]

And there's plenty leftover for my "Chicken Caesar Pasta" lunch tomorrow! Because the Caesar dressing has milk in it, I separated out this dish for the boys and gave them Italian … [Read more...]
Sweet Asian Chicken Salad Sandwiches

I've had a small can of mandarin oranges glaring at my from the cupboard...as if it says, what are you going to do with me? Put you into an Asian chicken salad, of course! Sweet Asian Chicken Salad Sandwiches I love chicken salad on the sweeter side. … [Read more...]
Summer Side Salad
A nutritious and delicious summer side salad...or lunch! There are many great colors, textures and flavors in this dish. I set out to use up some of my corn...then threw in the FIRST tomato from my garden (more on that tomorrow!), then a cucumber that was on sale last week and needed to be used up...plus some chickpeas, parsley from the garden and a vinaigrette … [Read more...]
