You want to know what I love about popcorn? Well, it's a few things. First, it's so ridiculously cheap. Yes, just the kernels...they are crazy cheap when you get a big bag. And I always get a big bag because we go through popcorn quickly. Second, it's so fun to make. My boys LOVE to make popcorn with our electric air popper. (Like this one.) We received ours as a … [Read more...]
Homemade Strawberry Syrup
Breakfast for dinner...always popular and always fun! If you ask any of my older boys what their favorite meals are, "brinner" would be in the top 5 for each of them. And this strawberry syrup...so so so so tasty. So fresh, so sweet, so perfect. I make this syrup with fresh strawberries, maple syrup, sugar and some cornstarch to thicken it up a bit. (You could use all … [Read more...]
Peanut Butter Chocolate Chip Baked Oatmeal
Print this out right now, and serve it as an after school snack. Or weekend breakfast...or lunch...or dinner. Or just snack on it all day long. Holy-yum. I don't just love this because it's got chocolate in it...although that is one of the main reasons. I love this because all my kids will eat it. It's kinda like cake...but not quite as sweet and sugar laden. It's … [Read more...]

Yogurt Blueberry Bites
2 ingredients. Stir up some yogurt in a bowl. Drop in fresh blueberries. Coat them in the yogurt. Drop them onto a cooking sheet lined with parchment paper. Freeze for 2 hours, then transfer to a plastic container and baggie. Keep in the freezer...but my guess is that they won't last long in there! So simple, so delicious... Also, this is the last recipe in our 31 Days … [Read more...]
Chocolate Chip Cashew Muffins
Want to know what makes so smooth fluffi-licious??? It's not sour cream, or mayo, or an extra egg... It's cashew butter!!! And it's amazing and so worth the tiny bit of added cost! But, I will tell you...if you can get just the amount you need from a bulk bin or 'made to order' like machine, then you'll be all set. My Sprouts store and Whole Foods has the option to get … [Read more...]
Raspberry & Chocolate Chip Quesadillas
Ya know...quesadillas don't have to be all tex-mex-y!!! I'm calling this sweet goodness pictured above a "quesadilla" but there isn't any cheese or queso. But there is some almond butter to act as the 'glue' in this snack. But somehow "almondbuttadilla" just isn't working for me...so I'm sticking with quesadilla. ;) This amazing snack calls for almond butter (peanut … [Read more...]
The Ultimate Breakfast Toast
This is like my dream breakfast. Partly because of the ingredients and flavors involved. And partly because it's just perfectly balanced. And partly because it's uber healthy...all 'whole foods.' Whole wheat bread Avocado & lime Egg Salsa It's just the ultimate in breakfast toast. It's "magical," as my husband calls it. And, don't forget my easy avocado … [Read more...]
Blueberry Vanilla Smoothie
If you are a regular smoothie maker, add this one to your rotation! And you MUST make this when blueberries are on sale at your local grocery store. Blueberries + vanilla yogurt + vanilla + a smidge of protein from almond butter...you'll slurp this smoothie right up!!! My boys are still confused (heck, so am I!) about why blueberries aren't called purple-blueberries. Yes, … [Read more...]
Avocado Ranch Dip
I <3 dips. Like, really love them. I love making them, I love dunking veggies into them, I love the crunchy-creamy combo of a snack like this! Dips make for great appetizers...and even a simple dinner on a hot summer evening. A 'dip bar' is a great way to do an easy, no-cook dinner. Just serve a dip like this with some veggies, along with a dip like this with some Naan … [Read more...]
