I have had these brownies bookmarked since I started this whole "dessert of the month" thing back in January. And when it came time for a sleepover this past Friday night, I thought a pan of these was in order! Now the question...was I making these for the kids, or for me?! (5 boys, 6 & under...husband out watching the hockey game with a friend...a pan full of … [Read more...]
Fruit Smoothie Popsicles
Whenever we have fruit that doesn't get eaten before it starts to droop we store it in the freezer until we can use it at a later date. Bananas are super easy to freeze right in their own peel and we store strawberries, blueberries, cantaloupe and other leftover fruit in plastic freezer bags for use in breads, pancakes, smoothies and these fabulous popsicles. They taste like … [Read more...]
Spiced Pear Sour Cream Bundt Cake
I don’t know about you, but when I get to the end of a big feast, the last thing I want to show up on my dessert plate is a super rich concoction that’s going to send my stomach into cardiac arrest. Or rather gastronomic arrest. I want light. I want tasty. I want fluffy. I want this Spiced Pear Sour Cream Bundt Cake. Because it is all those things. I want … [Read more...]
Fluffy Coconut Cake with Toasted Coconut Frosting
This year, I've decided to expand my baking methods repertoire by trying recipes that use batter making processes that I have not used before. And I'm documenting it all in my "dessert of the month" series. January - Gingered Pear and Blueberry Cobbler February - Angel Food Cake with Lime and Pistachios And now this cake for March! Now, before we proceed I … [Read more...]
Lime Cake
Any cake with more than two layers is a special celebratory cake in my cookbook. A spring green cake even more so. At the first sign of brilliant blue skies, I start to think of making my Aunt Kathy’s Lime Cake. Will it be for Easter, Mother’s Day, a birthday or a bridesmaids luncheon? All of the above. The inside of the cake gets its spring green … [Read more...]
Rolo Stuffed Chocolate Chip Cookies
I've just got to get this out of my system. Ever since I saw these Oreo Stuffed Chocolate Chip Cookies over at Picky Palate, I've been wanting to try something similar. I have a little thing for chocolate chip cookies. And by little, I mean big. And by big, I mean huge. And by huge, I mean... You get the picture. After making these, I'm really not sure that chocolate … [Read more...]
Angel Food Cake with Lime Glaze and Pistachios
(No. I did not forget about my "dessert of the month" promise. Yes. I do realize that it's the last day of the month. I work best on a tight deadline! Translation: I am one giant procrastinator.) A match made in food heaven... Lime. and. Pistachios! I made this earlier this month when we had some friends from church over for dinner. I made the angel food cake the night … [Read more...]
Dairy-Free Chocolate Pudding
About a year ago, I was introduced to "chocomole" by Katie from Kitchen Stewardship. She included a link to a recipe in one of her e-books, "Healthy Snacks To Go" and I was intrigued. So intrigued that I made in the next week. I could not believe it. I still can't believe it. It's a dairy-free pudding. (I can't remember the last time I had pudding.) This chocomole … [Read more...]
Pretzel Chocolate Chip Cookies
When I was in Chicago last week, my sister-in-law took me to a favorite bakery in her neighborhood, Bake°. It is adorable, cozy little spot that reeked of butter upon opening the door. And when I say, reeked...I mean it in the most delicious way possible. I don't do much baking with real butter. So the smell of the buttery baked goods was deafening. (That is, if a smell can … [Read more...]
Gingered Pear and Blueberry Cobbler
First up in this year's Dessert of the Month... Gingered Pear and Blueberry Cobbler! I've made a number of cobblers and crisps in my day. I thought I'd stick to a baking concept that I was familiar with and experiment with flavors. I've never made one, or tried one, with these 3 flavor combinations. I bought 4 pears at the store last week, not really intending to use them … [Read more...]
