Cajun Sloppy Janes
Love this bold, flavorful twist on the classic, featuring spicy Cajun-seasoned ground chicken, mirepoix with bell peppers, onions, and carrots...with shredded cheddar on a bun.
Servings - 4 servings
Ingredients
- 1 small white onion finely chopped
- 2 celery stalks chopped
- 2 whole carrots peeled and chopped
- 2 Tbsp butter
- 1 lb. ground chicken
- 15 oz. can sloppy joe sauce
- 1 Tbsp Cajun seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 hamburger buns
- shredded cheddar cheese garnish
- Side salad
Instructions
- Finely chop the white onion. Chop the celery stalks. Peel and chop the carrots.
- In a large skillet, melt the butter and saute the onion, celery, and carrots for 3 to 5 minutes. Mix in the ground chicken with the veggies and brown until the chicken is no longer pink.
- Stir in the sloppy joe sauce, Cajun seasoning and paprika. Reduce heat to low and simmer for 10 minutes. Season with salt and pepper to taste.
- Assemble the sandwiches by adding sloppy joe meat onto buns and add a pinch full of shredded cheddar on top of the sloppy joe meat. Let melt and add the top bun.
- Prepare side salad.
- Serve Cajun Chicken Sloppy Joes with side salad.
