These homemade coconut mango popsicles are the perfect treat for any age!
So Tyler had his first popsicle yesterday. Just in time for summer!!!
I hadn’t planned on letting him have a taste…it just sorta happened. I sat down to nurse him with a popsicle of my own in hand and he had NO interest in what I had to offer him and kept eying my popsicle. And by eying, I mean…EYING! Then he started reaching.
So I gave him a taste. And he wanted another. And another. So I sat him in his chair and gave him his own to try. (While it appears he is holding the popsicle himself, I am helping him.) And when he’d had enough of the popsicle, he went back to his regularly scheduled nursing.
I remember Ryan chewing on mango seeds when we lived in the D.R. He would nibble on that seed for 15 minutes. Drool all over the place and orange mango pieces in his hair, his ears and up his nose!
These popsicles made a similar mess!
When my first cookbook came out in December, a dear friend of our family sent me this super duper amazing popsicle maker by Zoku as a congratulatory gift. It was the dead of winter and the last thing on my mind was making popsicles. But now that we’ve hit 80 degrees every day this week, it’s high time to put this little contraption to work!
Mangoes on sale for $.50 each this week…and I found a few cans of coconut milk in the back of the pantry. Perfect combo for a snack during pantry challenge week!
You can rest assured we’ll be making LOTS of REAL FRUIT popsicles all summer long!!!
Who knows, perhaps I’ll sneak some veggies in too!
Homemade Coconut Mango Popsicles
Ingredients
- 1 banana
- 2 mangoes
- 1/2 - 15 ounce can unsweetened coconut milk or 1 cup milk
- 2 Tbsp sweetener
- water if you need to thin out the “popsicle juice”
Instructions
- Blend all the ingredients.
- Pour into your favorite popsicle mold.
- Freeze as directed on the mold, then enjoy!

That’s such a great idea! We always made popsicles with juice when I was a kid but this would be so much better – and creamier!

Whole Food Kids* has been posting a lot of recipes lately of super healthy popsicles, full of crazy ingredients. She even did one with lettuce in it! Not sure how I feel about that… But if you want some ideas, there are several.

We have a Zoku, a gift from my sis-in-law and the kids LOVE it. So excited to see someone else with one and I never even thought of coconut milk in a popsicle! Great idea. Enjoy!

We just bought a not an old fashion popsicle mold from Bed, Bath and Beyond for $2.99. It has the straw built into the handle to sip the melted juice. I think I’m going to try the kids smoothies as popsicle ingredients.

I saw this Popsicle maker at a Williams Sonoma demo last month. I knew it would be a handy gadget and I am a Senior Citizen! There are lots of good recipes to try ; you can make nine Popsicles on one freeze; they sell extra handles. When I go to Lenox Mall this week end, I just might get one. I am getting a new refrig this week; bottom pull out freezer–how handy.
I still have 2 sets of Tupperware in the garage and plan to hunt them this week end.

I made these yesterday and just tried one today. I hate to say it but it was only okay. My two year old rejected it– it just wasn’t sweet enough. I’ll try again but next use maybe half orange juice and half coconut milk, maybe add a little bit of vanilla flavoring.
I do have to say I am crazy jealous over your popsicle mold!

A sweetener would certainly help! I try to avoid sweeteners in smoothies and homemade popsicles if at all possible.

That looks absolutely delicious!!! I do have a question though… How do you pick mangoes? They are rarely available where I live, but sometimes they do have them… (I am that crazy lady that walks slowly by them 10 times but doesn’t buy them.) Is there a feel, color, or smell I need to look for? Any help would be great! Thanks!

Argh I hate it when recipes claim to only have a certain fruit, but then I look at the ingredients and it includes bananas. I really can’t stand bananas… Any suggestions on what to include instead?

Hey, I tried these last night and I was expecting them to turn out real creamy, the way yours look in the pics. I even put a whole can of coconut milk. They kind of tasted just like frozen mango puree. Is this how the texture should be? I also omitted the banana.
