While I was stocking up the freezer, I cooked a few whole chickens in the slow cooker. One of those times, I combined some of the shredded chicken with a can of Rotel diced tomatoes with green chilies, some frozen corn, black beans and ground cumin.
Mix. And Freeze.
Thaw. And Warm.
So simple…I love it!
I found some tortilla chips in the pantry. You see. My Dad was here recently visiting Tyler, and well, he has a *thang* for chips and salsa! And by *thang*, I mean that he eats them practically daily. So we’re using up the leftover chips here!
Pile the Chicken Taco mixture on top of some tortilla chips and melt some cheese over the top. That’ll do!
Chicken Taco Bake over Chips
Ingredients
- 2 cups shredded chicken
- 1 can Rotel diced tomatoes with green chilies
- 2 cups frozen corn
- 2 cups cooked black beans
- 1-2 tsp ground cumin
- Salt and pepper to taste
- Tortilla chips
- 1-2 cups shredded cheddar or Monterrey Jack cheese
- 2 broccoli heads
Instructions
- Combine shredded chicken, Rotel tomatoes, corn, beans with the ground cumin, and salt and pepper to taste.
- Pile on top of tortilla chips and top with shredded cheese. Microwave to melt cheese. Omit cheese if dairy-free!
- Steam broccoli in stovetop steamer for 4-5 minutes.
- Serve Chicken Taco Bake over Chips with Broccoli.

I could so easily turn this into a taco salad. Dairy allergies so the cheese is out.

Would make a delish taco salad. And you can certainly leave off the cheese! One of my boys has an allergy, I suspect the middle little man has an allergy (although not proven!), and I am not eating dairy while nursing baby boy! So I know it’s great without the cheese! Hubs eats the cheesy version!

@Erin, The $5 Dinner Mom, With all my allergies I almost always look at how can I make this into something I can eat. When I saw the pic I thought boy would my kids love this now how can I eat it. I also eat a high raw diet so I turn a lot of things into a salad.

Erin those chicken taco chips look awesome! My hubs and I love to eat appetizer/finger food for supper every once in a while…pop in a movie and enjoy as a family. And chicken nachos is a nice change up from beef. Great recipe.

I did something similar with turkey since I got turkey so cheap.
I baked an extra turkey for New Year’s.
A portion of that turkey was added to rice, a can of Rotel, a can of corn, and water. The first day it was a casserole with cilantro mixed in. The 2nd day it was nacho’s with cheese on cilantro on top.
My husband and 2 year old loved it!!!!.
