Recently, my husband and I decided to start making a weekly rice and beans meal again. I’ve been making them randomly, but we are aggressively saving towards a fun family vacation and we thought that re-implementing a weekly rice and beans meal would help! (And it has!)
This black beans and rice is super simple. Toss in some diced peppers and/or corn and you have a complete meal in one-dish. Or mix up some corn and salsa and serve it up on the side. However you prepare this, you’ll be thankful for the savings on this dinner!
