Erin, thanks for doing this series. My daughter (then aged 11) was diagnosed with Celiac in April 2013. One of our favorite meals at that time (pre-diagnosis) was your Curried Chicken Quinoa, and that became a bright spot in our GF conversion. When we were first learning the ropes, I can’t tell you how many potluck dinners I took that to so that there would surely be something there that she could eat (and loved). I’m looking forward to following this series and getting more great ideas from you! Thanks!
