This Cheeseburger Rice recipe is so easy to throw together after a long day and a great bonus is that it’s naturally gluten free in case anyone in your family has a gluten intolerance.
One of the best things about this meal is that it’s very inexpensive to throw together and most of the ingredients you should have in your fridge and pantry already.
Cheeseburger Rice

Servings - 4 servings
Ingredients
- 1 medium onion, chopped
- 1 lb. ground beef
- 1 tsp garlic powder
- Salt and pepper, to taste
- 15 oz diced tomatoes, drained
- 2 cups cooked rice
- 1 1/2 cups shredded cheddar cheese
- Fresh veggies, as side dish
Instructions
- Chop the onion and place in a frying pan with the ground beef.
- Brown the meat and cook until the onion is transparent.
- Add in the garlic powder, salt, pepper and drained diced tomatoes.
- Once the tomatoes are heated through, add in the cooked rice and cook until warm.
- Remove the frying pan from heat and add in the cheese, stir until melted into the dish.
- Prepare fresh veggies.
- Serve Cheeseburger Rice with fresh veggies.

My husband and I retired and have moved to a small town in Iowa. We purchased a home for $20,000 and my husband renovated it to fit our needs. Our property taxes are also quite low. For the first time, I am growing my own garden and canning and what I don’t grow I purchase at the Farmers’ Market. In the winter we go to Mission, Texas and live in an RV park that has 80 spaces. We own a small park model, pay $1,500 a year lot rent, get free water, heat when needed with bottled gas, and our electric bill is about $50.00 per month. We actually cut costs by living in the Rio Grande Valley during the winter. We are also able to access fresh fruits and veggies in the Valley during winter months at a very reasonable price. Although we don’t have much income, we live very well and do not feel that we are going without anything we need. We feel very fortunate to live in a small town where we know our neighbors who have become our friends and to be able to enjoy the warm weather in the dead of Iowa winters.

Do you usually just serve this on its own? I would probably just add a side salad but not sure what else my little kiddos would eat besides this.

I do a variation on this exact dish. I use Thai Jasmine rice, but I doctor up the meat a bit, and will add in any of the following, a pepper, an onion, some fresh cut tomato, and/or some garlic depending on what I have on hand to add to the meat.
I also will add in taco seasoning to the meat, (Taco Rice). Usually I will also add in some spaghetti sauce to add some more saucyness, and then will add in a few tablespoons of a sweet barbecue sauce. Pushes the flavors towards a taco-flavored sloppy joe mix. I serve on top of the rice, and usually add corn/green beans mixed together on as a “crown” around the edge of the bowl. Also add the cheese under the meat so that it melts through the rice along with the juices from the meat. Finally, second and third day are even better as long as you refrigerate the meat and rice together. The juices soak into the rice, and it’s incredible.
This is one of my absolute favorites, and you can go a fair distance on a lb of ground beef. Season it to make your dish into a set of flavors that you love.

I also make a variation of this recipe. What I do is I actually start off caramelizing some onions and diced mushrooms in a but if butter or olive oil in a saucepan. I add the ground beef to brown along with about a half a tablespoon of tomato paste, soy sauce, Worcestershire sauce, and mustard. I add about 1/2 cup of uncooked rice (my meals are usually for one) and toast it in the pan until brown. I then add chicken broth and cook until the rice is done, about 20 minutes or so. Then I top it with cheddar, fresh diced tomatoes, and shredded green leaf lettuce. I usually do this only if I am especially broke and dont have access to a real cheeseburger. It’s really good and cheap!

I made the cheeseburger rice recipe as directed until adding the cheese, at which time I separated out a little for me to add dairy free cheese. The remainder of the batch I added shredded cheddar cheese for my husband. And he LOVED it!!!
