These days I’m trying to cut as many corners as I can without sacrificing the quality and healthiness factor of our food. I’ve decided to make a fruit salad twice a week with the different fruits that I find on sale each week in the produce department. I find myself cutting up a different piece of fruit every day for lunch and another for a snack. Not really the most efficient use of my time. So I thought, let’s do all the cutting at once (or twice) and make up a fruit salad.
This week’s salad includes blueberries, strawberries, mango, kiwi, peaches, nectarines and watermelon. I simply cut up about half of what I buy and toss it all together. The other half stays fresh in its own skin until a few days later when I cut up round 2 for the week. Because the fruit is “ready” and “convenient,” we are eating more of it.
I plan to continue this throughout the summer while the fruit prices are so low. I’ll just get enough of the fruits that are on sale each week, and we’ll have a healthy, quick and inexpensive snacks all summer long!

We do the same thing with our fruit expect we cut up the whole fruit in one shot. Our kids are older though (10,18,21) so it goes pretty quick. Sometimes I keep each fruit in a separate container for those picky eaters.

Keeping cut up fruit on hand comes in handy for throwing together a quick smoothie! Add some vanilla yogurt and a few ice cubes and presto, fruit smoothie. Put the leftovers in popsicle molds for a tasty treat later. If you don’t have enough, add a little to several of the molds and add more leftovers later for a layered effect.

I only add a few splashes of lemon juice if I include apples or bananas. Otherwise no!

YUM!! This looks so good! I always have the good intention of cutting up my fruit for fruit salad, or just so it is ready to eat, but have a hard time following through with it. This is an inspiration to me today!

Nope. If Iadd bananas or apples, I’ll add a few splashes of lemon juice.

How yummy that looks! Great idea to cut it up and mix together. Maybe my husband will eat more fruit if I have it available like this. Love the variety and also purchasing when in season and on sale.

Looks yummy! My daughter can’t have milk, so I mix her fruit salad with soy yogurt to add some calcium…good stuff!

Thanks for the inspiration to eat more fruit. BTW, you might want to try Mexican style fruit salad – it’s delicious. Just serve pieces of fruit over a small mound of cottage cheese, sprinkle with some raisins and sunflower seeds, and drizzle honey over the top. Yum!

Can you freeze this fruit salad (if you don’t put bananas or apples in there)?

Yep…could be frozen and used for smoothies. Bananas can be frozen…apples can be, but I don’t recommend it!

Great idea. You can actually freeze this fruit mix just like the berries and have for smoothies all winter.
