So here we have it. The curried chicken quinoa with peas recipe that I will be making 3 times a week, just for Tyler.
Well, maybe not that often…but it’s certainly one I will be adding to our regular rotation!
Tyler, Tyler, Tyler.
I normally give him small portions, about 1-2 tablespoons in size, at a time. And if I were to give him more, he’d end up dumping it in his chair, spreading it all over the table, dropping it on the floor. Ya know, typical 16 month old table behavior.
So I gave him a bit. He ate it. I gave him another little portion. He ate that.
I checked the floor. None there.
I checked in his chair. None there.
And this continued. He was eating it!
And I’d see him doing this…
…so I’d give him another scoop.
…and then he’d get desperate!!!
I don’t know if it was the spice level that he enjoyed, or the fact that it didn’t really fall off his spoon as he fed himself. Doesn’t matter to me…I was just thrilled that he ate so much of it! (Yeah, calories!)

How to Make Curried Quinoa with Peas and Chicken
Saute the chicken pieces, chopped onion and crushed garlic in a Dutch Oven.
Spicify.
Stir in the canned tomatoes.
Add water.
Quinoa.
Voila. (Minus the peas.)
(Those get mixed in at the end.)
Curried Quinoa with Chicken and Peas
Ingredients
- 1 Tbsp olive oil
- 1 lb. boneless skinless chicken thighs cut into bite size pieces
- 1 small red onion chopped
- 2 garlic cloves crushed
- 15 oz. can petite diced tomatoes
- 1 Tbsp curry powder
- 1/2 Tbsp chili powder
- 1 tsp nutmeg
- 2 cups water or chicken broth
- 1 cup quinoa
- 12 oz. bag frozen peas
- Salt and pepper to taste
- Salad; as side
Instructions
- Add the oil, chicken pieces, chopped onion and garlic to a Dutch oven. Saute for about 10 minutes, or until chicken pieces are mostly cooked.
- Add the diced tomatoes, undrained, curry powder, chili powder and nutmeg. Stir until combined and let cook for about 5 minutes.
- Stir in the water and bring to a bubble.
- Stir in the quinoa, bring to rolling boil and then reduce heat to medium low, cover and cook for 20 minutes.With about 5 minutes left to cook, stir in the frozen peas.
- Turn heat to low and keep warm until ready to serve.
- Prepare salad.
- ServeCurried Quinoa with Chicken and Peas with side salad.

That is cute my Tyler had the same issues now 9 but he is a picky eater. Now my 2yr old is the same but this one allergic to all dairy. His therapist suggested foods with different flavor curry, spicy just to see if he likes it. The bold flavors the kids with low muscle tone love. I can’t wait for more Tyler approved recipes. 🙂

Quinoa is delicious and can be cooked and consumed in so many ways! We started eating Quinoa a few months ago and have learned what a great source of vitamins and minerals it is: iron, magnesium, Vitamin E, potassium, amino acids, fiber.

This is perfect timing, I just tried quinoa for the first time and didnt really realize what it was- but I soaked it overnight and then it had tails so I thought what in the world am I cooking! Then I read that it is a seed, so it made more sense, Lol. Anyway so tickled to find a way to use it in a recipe that I think I’ll really like. Thanks!!

can’t wait to try this—btw my son, Aidan, who is now 11 and just 54 pounds, was born with ACC (agenesis of the corpus callosum), MR, hypotonia (low tone) also had prob. gaining weight. I remember the speech therapist, who came to our home, would do “french fry” therapy (now he can’t eat potatoes). He loved them but we noticed he couldn’t chew very well nor moved his tongue to move the food. Anyway she would bring french fries with her take the fry and put in his mouth, then she would rub it across his tongue to each side of the mouth, we also used apples in a mesh, it worked. Due to his teeth being malformed he still has prob. with closing mouth properly or chewing, but he can move move around in his mouth instead of it being push to the top of his mouth.

I have been wanting To try quinoa I am diabetic, it’s hard to find things that are good for me, taste good and AFFORDABLE, but every time I go to get quinoa it’s extremely EXPENSIVE!! But this surely looks good! Hopefully one say I will find it on a good sale

I made this last night, adding more peas than the recipe called for as well as some frozen cauliflower florets. I was truly amazed that my sons, who don’t really like curry, liked it! This one is a keeper.
