Sheet Pan Chicken with Sweet Potatoes
This wholesome, one-pan meal combines tender, seasoned chicken bites with caramelized sweet potatoes and red onions.

Ingredients
- 3 large boneless, skinless chicken breasts cut into 1-inch pieces
- 4 medium sweet potatoes peeled and cut into small cubes
- 1 small red onion sliced
- 1 tsp seasoning salt
- 1/4 cup olive oil
- 2 tsp vinegar
- 2 Tbsp minced garlic
- 1 tsp seasoning salt
Instructions
- Preheat oven to 425 F and line a rimmed baking sheet with silicone baking mat.
- Place the cubed sweet potatoes and sliced red onion on the prepared baking sheet. Sprinkle the seasoning salt over the top.
- Place the chicken breast pieces in large bowl and combine with the olive oil, vinegar, minced garlic, and seasoning salt. Spread the seasoned chicken pieces onto the baking sheet on and around the cubed sweet potatoes.
- Roast in the preheated oven for 30 to 35 minutes, or until largest chicken pieces have cooked through. The cooking time may vary depending on the size of the chicken pieces. Let cool slightly before serving.
