Sausage Pancake Muffins
The best sweet-savory muffin that ever existed!
Servings - 12 muffins
Ingredients
- 1 lb. mild ground breakfast sausage
- 1 tsp minced dried onion
- 1 small red bell pepper finely chopped
- 2 cups pancake mix regular or gluten free
- 1 1/4 cups cool water
- 1/3 cup maple syrup
- 1 cup shredded cheese
Instructions
- Preheat the oven to 400 F. Lightly grease a 12-muffin well pan with non-stick cooking spray.
- In a skillet, brown the sausage with the onion and chopped bell peppers.
- In a large mixing bowl, whisk together the pancake mix, water and maple syrup. Once the batter is smooth, fold in the sausage-bell peppers and the shredded cheese. Combine until batter forms.
- Transfer the batter into the prepared muffin pan.
- Bake in the preheated oven for 15 to 18 minutes, or until golden brown on top and a fork comes out clean from the middle muffins.
- Let cool slightly before serving warm, as is or with butter. Enjoy!
