Quick and Crispy Air Fryer Potatoes: The Perfect Side Dish, Ready in Minutes!
We make a lot of air fryer baby potatoes around here.
This morning, I was thinking about these “Crash Potatoes” that you cook on the grill and thought – these would be so good in the air fryer. Maybe even better.
And these Twice Air-Fried Potatoes were born.
And I was right…the air-fried version give just the best crispy skin pieces, along with perfectly tender bites of potato.
Note: highly recommend using a baby potato or fingerling potato. I think that small gold potatoes would be delicious cooked in this way too, but you’ll need to air-fry them longer on the first round since they are thicker.

Twice Air-Fried Potatoes
Ingredients
- 3 lb bag baby or fingerling potatoes
- 2 Tbsp olive oil
- 2 tsp dry Ranch seasoning divided
- 2 Tbsp butter
- salt and pepper to taste
Instructions
- In a mixing bowl, coat the baby or fingerling potatoes in the olive oil. Sprinkle half of the Ranch dressing mix over the top and toss. Transfer to the air-fryer basket.
- Air fry at 400 F for 10 minutes, or until all potatoes are fork tender.
- Transfer the potatoes to a large platter or baking mat. Using a flat spatula, press down to flatten the potatoes. Return the potatoes to the air-fryer basket, in a single-ish layer.
- Air fry at 400 F for 3 minutes. While in the air fryer, melt the butter and mix in the remaining Ranch dressing mix.
- Transfer the twice air-fried potatoes to a serving dish and drizzle the butter-Ranch over the top. Enjoy as a side dish with your favorite chicken, beef or sausage.
