Baked Chicken Ready in Under 30 Minutes?! Here’s how…
Baking chicken breasts in the oven can take upwards of an hour and sometimes my afternoons don’t have the kind of wiggle room for getting dinner in the oven and waiting for it to bake…and for the hungry gremlins that NEED TO EAT RIGHT NOW.
I love sheet pan dinners with cut up chicken bites because they bake up so quickly…especially if you have quick to roast veggies like broccoli, cauliflower and carrots to go with it.
The key with sheet pan dinners is making sure that everything on the pan needs about the same amount of time baking or roasting. For example, this Sheet Pan Meatloaf is perfectly paired with Brussels sprouts because both take longer to cook on the sheet pan.

Sheet Pan Chicken Bites with Veggies
Ingredients
- 3 large boneless skinless chicken breasts cut into 1/2-inch cubes
- 1 cup BBQ sauce or other favorite sauce/marinade
- 2 large fresh broccoli heads cut into florets
- 1 lb. bag baby carrots
- 1 Tbsp olive oil
- 1 tsp seasoning salt
Instructions
- Preheat oven to 400 F. Line a rimmed baking sheet with foil or a silicone baking mat.
- In a small bowl, toss the chicken cubes with the sauce, coating the chicken well.
- Spread the chicken bites with sauce into a single layer in the center of the prepared baking sheet. Add the broccoli florets in a single layer on one side of the baking sheet, and add the baby carrots in a single layer on the other side of the baking sheet.
- Drizzle the olive oil over the broccoli and carrots and gently toss. Season the broccoli and carrots with the seasoning salt.
- Bake in the preheated oven for 30 minutes, or until chicken is cooked through and veggies are fork tender.
- Serve Sheet Pan Chicken Bites with Broccoli and Carrots. Enjoy!

There are two cook times listed. One above the recipe and one below the recipe. Do I cook for 11 or 30 minutes? Also, what sauce did you use. Thank you!

I updated the cook time at the top. The instructions is correct. I used the Gold BBQ sauce from Trader Joes, but any of your favorite sauces or marinades would work.
