I used apricot-pineapple preserves since that’s what I had on hand and apple juice since we don’t use wine. After coating the pork chops in it, I put them aside and cooked some veggies in the sauce (bell pepper, summer squash, tomatoes, snap peas). I served it with rice. Delicious!

one thing that my husband requested this week was porkchops I am so glad that you hosted this event I love porkchops but really wanted a different sort of recipe

So are pork chops on sale this week specifically or generally pork chops are a sale item in January? I like the idea of a round up, if that’s the point, but I was thinking the intent of the new series was to give some more specific info. Help!

Just a round up…pork chops are on sale in different places all over the country…it’s impossible for me to highlight something that’s on sale everywhere each week! I’m going to create a master list after a few weeks and keep adding to the master list.

I usually buy a whole boneless pork loin (sometimes as big as 8-9 lbs), then slice it into two freezer bags of pork “chops” and keep two large chunks for crockpot meals like Pulled Pork sandwiches. The lowest in my area is $1.69/lb, and I can get 4-5 meals worth out of one of those big ones.

Soup-er Pork Chops, using Campbell’s basic recipe. I generally use cream of mushroom soup (store brand, or whatever is on sale). I also season with garlic powder, onion powder and any a bit of sage, sometimes thyme. I serve with rice or potatoes. Sometimes I cook rice with the sauce, adding more water or broth. I usually just cook it in a skillet, as once everything is browned, it doesn’t need a lot of attention. It could easily be done in a slow cooker.
