So I’m still here. Still cooking. Still feeding the boys.
When Tiffany and Lisa shared these recipes with me, I couldn’t decide which to try. So I made both. We sampled each…and the rest went into the overflowing freezer.

We had these with some fresh pineapple and scrambled eggs.
On the baby front…if this little man doesn’t arrive over the weekend, he will arrive on Monday. We have made the decision to be induced if necessary! So keep your eyes peeled on Monday. I’ll likely send out a few Twitter updates on Monday, if you wanna follow along! So excited to meet the little guy!!!

Our little man was taking his own sweet time coming out also. We finally broke down on Friday and scheduled an induction to be done Monday. Friday night my water broke. I think babies like teasing mommies. Good luck with your delivery – however it happens!

I wanted to ask you a question about this recipe since I know your boys cannot have dairy. (My youngest daughter was just discovered to not have a dairy allergy, but is HIGHLY sensitive to dairy and therefore, it makes her sick to ingest it.) I made this recipe pre-highly sensitive, but was wondering if you made the Banana-Cinnamon Waffles using rice milk instead of the buttermilk with any adjustments?

Yes…you can use rice milk with a teaspoon of vinegar to get the buttermilk effect. That’s how I made them and they turned out fine.
