We used to make baked oatmeal for breakfast all the time when we lived in the Dominican Republic! There are so many great ways to make baked oatmeal. I thought I’d share my basic recipe, and you can mix in whatever you prefer…blueberries, strawberries, diced apples, dried cranberries, raisins…whatever!
I made this in a 9×13 baking dish so that we would have leftovers for breakfast! You could half the baked oatmeal portion of the recipe and bake in an 8×8 baking dish.
Baked Blueberry Oatmeal with Scrambled Eggs
Ingredients
- 2 eggs
- 1/2 cup applesauce
- 3/4 cup sugar
- 1 cup milk
- 3 cups of quick cooking oats
- 1 tsp salt
- 1 Tbsp baking powder
- 2 Tbsp brown sugar
- 1 tsp ground cinnamon
- 2 cup fresh blueberries
- Vanilla or plain yogurt, or cream, or milk
- 8 eggs
- 1/2 cup milk
- Salt/pepper
Instructions
- In large mixing bowl, whisk 2 eggs, applesauce, sugar and milk. Once creamy, add oats, salt and baking powder and mix through. (If you wish to add in any fruits, add about 1 cup into the batter at this point.) **Gluten free: Use certified GF oats. They are more expensive, but this dish would be worth it!
- Pour batter into greased 9x13 baking dish. Sprinkle top with brown sugar and cinnamon. Bake at 350 for 30 minutes. Remove from oven and let cool for 5 minutes before serving. Don't wait too long, as you want to serve it warm! Top with your preferred topping: vanilla or plain yogurt, or cream, or milk.
- Just before taking the baked oatmeal out of the oven, whisk together 8 eggs, milk, salt and pepper. Add to skillet over medium-high heat. Scramble to your likeness.
- Serve warm Baked Oatmeal with Scrambled Eggs.

I like using applesauce instead of oil/butter/margarine that’s in other recipes! Applesauce keeps it a bit healthier!

This looks really good. The GF oats I have aren’t the quick cooking kind but I think I might try soaking them for a few hours and see if it works.

You might grind them up in a mini chopper or food processor. I’ve not tried that, but that’s what I would do if I make this recipe again using the GF oats.

This looked so good I wanted to try it asap. So I mixed up the batter, got it in the oven, and I was just about to scramble the eggs when the phone rang. It was my father-in-law wondering when we wanted to meet him at the restaurant. What?!?! We forgot we were meeting my in-laws to celebrate mother-in-law’s birthday. No breakfast for dinner tonight. 🙁
But, I invited my in-laws to come over after dinner for a “special treat.” Baked apple cinnamon oatmeal with caramel praline ice cream a la mode. DELICIOUS!

BTW, I didn’t even notice that the directions were for quick cooking oats and we used the old fashioned ones and it turned out delicious.. I ended up using 1/2 c brown sugar, because our sugar wasn’t opened and I was feeling lazy — and I will cut back next time- but I doubt that would change how the oats turned out. We also used frozen raspberries.
I think I’ll experiment by mixing it up the night before and using my steel cut oats (the cook for 30-40 minute kind)- I think they will need a little ‘soaking’.
Oh, I also put 3 in 3 silicone muffin cups and cooked for about 15 minutes– for a mini-appetizer as my kiddos were hungry. That worked quite well, and I used them as ‘bowls’ with a little yogurt on top. I’m thrilled we have lots of leftovers and curious how they will re’heat’.

I made this tonight for dinner. I added blueberries. The only thing I did different was instead of the white sugar I used Splenda. We put warm milk over it. I only did 1/2 the recipe since I did not know if we would like it. My husband and I both really liked it. He asked me to make it again real soon. Thanks for the recipe..

I made this with Splenda instead of sugar and it turned out very good. I used strawberries but I’d love to try it with raspberries or blueberries. Funny, I never make myself oatmeal but I LOVED this recipe and I’ll for sure make it again. Super nutritious! Thanks!

Hey, so it is ok to freeze these things on your “stock the freezer list”? are the directions any different if you freeze them?

Nope…just freeze after baking. Then thaw over night in the refrigerator the night before you want to eat it. Reheat in the oven at 350 for 30-45 minutes, depending on how well it thawed the night before.

My son is allergic to eggs. Could I replace the eggs with something else (bananas?) or just leave them out and still have the recipe turn out ok?

Oh you sneaky little devil! What a way to eat “dessert” for breakfast and still be healthy! I made mine with (canned) peaches cut into chunks. Hubby loved it, too. I plan to freeze in individual packages, remove from freezer in the AM, take to work, thaw ’til lunch, warm in the microwave and have a bit of sweet with my lunch. This was a GREAT recipe! In fact, I thought the baked oatmeal was even better after it’d been frozen, and defrosted/reheated. As a working woman, I get tired of processed cereal or granola bars for breakfast – grabbing one of my baked oatmeal squares out of the freezer and nuking it at work is a vast improvement.

I’m sorry, but I’m a little confused. The ingredient list says “3 cups quick cooking oats”. When I see “oats” as an ingredient, I use the oats uncooked. In reading through the comments, I read your response that it is “cooked oats”. Is the 3 cups the measurement of oats before or after cooking? Thanks.

I’ve been making baked oatmeal for years. You can do all kinds of “fun” things with it. Adding shredded apples with the sugar/cinnamon topping is good. Another way that I absolutely LOVE is adding one cup of fresh or frozen (thawed) peach slices (that I purchased on sale in the summer, cut up and froze), a 1/2 cup of dried cranberries and 1 tsp. of vanilla. Yummy!!

Fantastic!! An instant favorite! I did decrease the sugar to 1/2 a cup the first time, and then less than a 1/3, the next time. I still it thought it was fabulous, and I think I’ll go to 1/4 the next time!

Yes Brandy…freeze after you bake it and after it has cooled completely to reduce freezer burn. I would cut the baked oatmeal up into squares and freeze “individually”…for faster thawing and the perfect portion size.
