It’s back to school time! That translates to: hurry with your homework, so we aren’t late for scouts, orchestra, school meetings, OT appointments, soccer, and wait, DINNER! I love sitting down to eat as a family, but sometimes that’s just not possible. It times like those that I love the egg biscuits!
I’ve even tossed one out the door at a child who “didn’t have time to eat!”
The egg biscuit is a complete package, so I still feel good when that is their only dinner. Plus, they taste darn good! We’ll also have them for breakfast when we have company, because they look like a lot of effort happened, when actually, it’s pretty easy! It’s also easily doubled for more people!
This is another wonderful recipe that is easily adaptable to peoples tastes. My daughter doesn’t want meat, my husband wants everything plus salsa, and the baby likes extra cheese. Done in seconds!
Egg & Sausage Biscuits
Ingredients
- 10 ct pkg refrigerated biscuit dough or make your own biscuit dough
- 5 eggs
- 4 Tbsp milk
- 1/2 cup shredded cheddar cheese
- 1 cup cooked sausage or seasoned hamburger I used my leftover taco meat!
- 1/2 cup salsa
- Salt and pepper to taste
- Optional toppings: diced bell peppers green onions, sliced mushrooms etc.
Instructions
- Preheat the oven to 400 F.
- Whisk together eggs and milk, a pinch of salt and some cracked pepper to taste and set aside.
- Roll out each biscuit until it’s slightly bigger than the circumference of your muffin tin.
- Grease the muffin tin with cooking spray and push one biscuit into each muffin cup being sure to push it all the way down and to the sides.
- Divide the cheese evenly in each of the biscuit cups, and add the meat, salsa and any other optional toppings.
- Pour egg mixture in, until 2/3 full. Don’t overfill.
- Bake for 10 to 12 minutes or until biscuits are golden and eggs are set.
- Freezer Friendly Instructions: Let cool completely and place in a freezer safe bag or container to freeze. When ready to enjoy, let thaw in the fridge overnight and warm up in the microwave or thaw in the microwave on defrost and then reheat. An alternate reheating method would be to warm in the oven at a low temperature around 275 F until warmed.

God stuff, what a solid time saving method. Agreed, those egg biscuits can be suited for each person’s preferences and can be even snacked on throughout the day. Salsa on top is a good main ingredient too:)

This is a great idea. (There’s a “but” coming.) If you are already going to the trouble of mixing up a batch of these muffins and even freezing them ahead for a quick and healthy family breakfast or take-along, why use packaged biscuit dough? Biscuits are the easiest and quickest bread you can make: flour, water, butter, milk, and a little baking powder. (There are recipes all over the Internet.) Packaged biscuit dough is chock full of chemicals and preservatives, as for Velveeta, well I suppose if you like the stuff, but there’s so many good melting cheeses that don’t have the preservatives found in Velveeta: swiss, mozarella, monterrey jack, et.al. Our kids are getting way too many chemicals and preservatives in processed food. It takes no more time to mix fresh as it does to pop open a can. It’s cheaper for one and a lot healthier.

SamanthaSue, I totally agree with you. I use this recipe to be fast, and when I can get 4 cans of biscuits for 1.25, I use them on the nights I have kids flying in & out of the door. As for Velveeta, yeah, guilty pleasure. I think it’s yummy. But I love all kinds of cheeses!

Can these be frozen and reheated when needed? Have you tried it yourself? I send breakfast to school with my kids (have to get on the bus so early) so I am always on the lookout for breakfast items that can be made ahead and frozen. Theses look yummy too!

Oh my goodness! My new love! I am a homeschooling mom of 3 boys, so I often cook breakfast for my family, but there are times when I need a breakfast ready to hand that my fellas can fix for themselves. What a fabulous thing this will be! Just keep some in the freezer and they’re ready when needed! Thanks a million!!!

I’m thinking they could be frozen. Or even if you just made up a batch and put in the fridge. What would be the preferred way to reheat?

I have not personally frozen them, but I don’t see why they couldn’t be. I’ve kept them in the refrigerator for a day or 2, and popped them in the microwave to reheat. They don’t taste as good that way, so if you have the time, I’d say warm them in the oven a couple minutes on 250.

I love this idea, and would never have thought of it on my own . Was thinking today of trying to make biscuits, and hope they’d turn out. This way of baking the whole egg biscuit together should help inexperienced biscuit makers. The packaged biscuits I’ve bought lately are terrible and usually not on sale in my town.

Just took these out of the oven. I overfilled. LOL I will make them again. they smell great and look so y ummy! My older boys are excited to eat them. I don’t buy the premade bicuits anymore and they are their favorite. I guess I should buy them more often.

I love this idea but, I hate those packaged biscuit doughs especially since they are all white doughs. Was thinking I could do this with some premade whole wheat pizza dough I can get at Trader Joes.

And when you’re adding the meat & cheese, just use a little less of those items & throw in some chopped peppers, tomatos or what ever you like.
You can pretty much alter most recipes to suit your tastes.
