Any cake with more than two layers is a special celebratory cake in my cookbook. A spring green cake even more so.
At the first sign of brilliant blue skies, I start to think of making my Aunt Kathy’s Lime Cake. Will it be for Easter, Mother’s Day, a birthday or a bridesmaids luncheon? All of the above.
The inside of the cake gets its spring green color from a box of lime jello. Plus, the icing calls for three tablespoons of lime juice.

Oh, that looks SO good! I love lime. It is such a lovely idea to write down each time you use a family favorite recipe to catalogue all the good times.

Ah! What a creative twist on one of my family’s favorite desserts, key lime pie. The recipe looks very kid (and adult!) friendly. Thanks for sharing this!

I made this last night for my Ladies’ Bible Study and everybody raved over it! I added some green food coloring to the icing and then put some whole and chopped Cadbury mini eggs on top. It turned out so pretty! I was also thinking that this cake could easily be changed up a bit if you used Cherry or Strawberry Jello. Then it would taste like a Cherry or Strawberry Limeade. Will definitely be making this again!

Why do you use orange juice instead of lime juice in the cake? Would I need to use pulpless OJ?
