It seems that some variety of potatoes are on sale every week these days. I’ve had a bag of red potatoes that needed to be used. And what a better way to use them, but with Grilled Steaks. My Dad made steaks on the grill for us last week…and we had these grilled red potatoes on skewers and some grilled eggplant too.
(The eggplant is made by slicing into 1/4 inch or smaller slices, then placing in a colander and sprinkling with salt. Let sit for 30 minutes and allow bitter juices to drain. Rinse, pat dry and brush with olive oil. Season with Italian seasoning and grill for 5-7 minutes per side. Depending on heat level of grill.)
These red potatoes on skewers are a simple 2 step process. The only ingredient is the potatoes, until you get to the topping part 🙂
Boil the red potatoes whole for 8-10 minutes. Remove from the water and let cool for a few minutes before placing onto skewers. Brush with olive oil and sprinkle salt onto the greased potatoes.
(As you can see from the picture, I used 2 skewers for the potatoes because they weigh so much and I wanted them to be nice and secure on the skewers. I was also thinking that the double skewer would radiate more heat from the grill through the skewer and cook the inside of the potato faster. This might not be necessary, but it worked well.)
Once the potatoes have cooked through, slide them off the skewers and top with your favorite toppings.
Grilled Potato Skewers
Ingredients
- 3 lbs. red potatoes
- 1 Tbsp olive oil
- salt sprinkled
Instructions
- Boil the red potatoes whole for 8-10 minutes.
- Remove from the water and let cool for a few minutes.
- Place potatoes on skewers. Brush with olive oil and sprinkle with salt. Note: I used 2 skewers for the potatoes because they weigh so much and I wanted them to be nice and secure on the skewers.
- Once the potatoes have cooked through, slide them off the skewers and top with your favorite toppings.
Enjoy the smoky flavor and the perfectly cooked center of the potatoes.

Hi Erin, Consider microwaving the potatoes for about 5 minutes. The centers get done but not the outside. This speeds up the process. Plus you can wrap them in aluminum foil with a slice of butter. This makes the skins crisper. Pus you have the melted butter to put on the potatoes.
