Sneaky chef concept here.
In a not-so-sneaky way!
This has become my “go to meal” lately…for those days when a curve ball gets thrown at me…and my brain can’t seem to form a coherent thought…much less a plan for dinner.
This meal is a one pot meal. Starch, protein, veggies. All in one pot.
Easy to make, easy to clean up.
Even if it’s not so sneaky. It’s still easy.
Oh…and I imagine that we’ll be eating this often…with the spinach harvest that’s coming our way. More on that tomorrow!
Spinach Spaghetti

Pasta of any sort is my go-to meal when I’m in a rush! I either make a light flavor out of olive oil, basil, parmesan cheese and broccoli or I make a red sauce with a can of tomato sauce, some spices and cheese. It is always quick, filling and makes enough for lunch the next day!

I’m not a fan of spinach, but this looks great. I may have to try it just to sneak veggies in on myself in a not-so-sneaky way!

I’ve tried this one out and it was awesome! I made a healthier version though by using tuna instead of beef and whole wheat pasta instead of the ordinary one. Really great recipe.

This looks good, but it’s not quite a one pot meal.

This is not my husband’s fave, but I like to make it for me and the kids (and he just has to deal). Nobody here goes for the spinach, though, so a lot of times I will puree it in the blender before I add it. Also works for any kind of squash. Then I pour the extra veggies in the ice cube tray for the next time we have a meal like this.

My kids are somewhat picky as well, so I would have to puree the spinach as well.
I recently made homemade marinara sauce and included a LOT of veggies. My oldest son refuses to eat marinara, but ate mine saying it was “okay”. He is spoiled though and refuses to eat any jarred sauces because I taught him how to make homemade alfredo…
