Alrighty y’all!
Tonight’s recipe comes from faithful reader Marilyn! And I’ve got another similar one that I’ll share tomorrow night. This week might turn into “Skillet Dinner Week”…or it might not?!??!?
(Hint: I’ve got some great grilling recipes coming your way!)
So if it rains…and you can’t get out to the grill, stay in and make these skillet dinners instead.
Mexican Ground Beef Quinoa Skillet
Ingredients
- 1 lb. ground beef
- 1/2 cup chopped white onion
- 15 oz. can diced tomatoes undrained
- 4 oz. can chopped green chilies
- 1 cup quinoa
- 1 1/2 cup water
- 1 1/2 Tbsp chili powder
- 1 tsp ground cumin
- salt and pepper to taste
Instructions
- Brown ground beef and onion; drain excess fat.
- Rinse quinoa in sieve/colander.
- Add tomatoes, chilies, quinoa, water and spices to ground beef mixture and simmer (uncovered) for about 25 minutes. (If water evaporates too quickly, cover pan for remainder of cooking time.)
- Serve Mexican Ground Beef Quinoa Skillet.

My blog lists mainly Indian recipes, and most of them are meatless, so you would find that they mostly fall under 5$ a meal.

I was already making turkey & black bean tacos for dinner, so I changed it up and tried this version with the quinoa. EVERYBODY in my family ate it! I’ve tried several recipes using quinoa and the results were barely edible. This recipe is a keeper! I’d love to see your future quinoa recipes. Thank you!

We tried this and it was a hit! My 3 year old has been in a barely consuming enough calories for life spell and this was the first meal he gobbled up! Yippee! Now we are on a ravenous eating kick.
My husband liked this so much he declared we should eat quinoa twice a week! I don’t have enough recipes to support that though.

This was so good–my whole family had seconds!! I let it thicken up so I could serve it inside warm tortillas with fresh cilantro, cheese, lettuce, low-fat sour cream, and olives. Yum!!! Bring on the quinoa recipes!!

This was AMAZING!
I used 2 cups of chicken broth and Morning Star Meatless Crumbles. I topped with cheese and greek yogurt (as sour cream).
