A scrumptious meat and marinara based soup, with broken lasagna noodles cooked right in. Top it off with some ricotta, mozzarella, and/or Parmesan cheese and you have the best Lasagna Soup!
It’s all the flavors of lasagna, in a fraction of the time.
Get the beef and marinara simmering and then drop in some broken lasagna noodles. Once they are cooked, ladle into soup bowls and top with your favorite cheeses (or whatever you have on hand!)

Lasagna Soup
Ingredients
- 1 lb ground beef browned
- 1 Tbsp minced onion
- 1 tsp garlic powder
- 26 oz. jar marinara sauce
- 15 oz. can diced tomatoes undrained
- 1 Tbsp Italian seasoning blend
- 1/2 tsp crushed red pepper flakes
- 4 cups beef stock
- 4 lasagna noodles broken
- shredded Mozzarella cheese garnish
- grated Parmesan cheese garnish
- fresh parsley garnish
Instructions
- Brown the ground beef with the minced onion and garlic powder. Drain if needed.
- To a large saucepan or Dutch oven, add the browned ground beef, marinara sauce, diced tomatoes, Italian seasoning, and crushed red pepper.
- Bring to bubbling and then stir in the beef broth. Bring to bubbling again, then add in the broken lasagna noodles. Let cook over medium heat for 10 to 12 minutes, or until noodles have softened.
- Ladle the soup into serving bowls and add a pinchful of shredded mozzarella, or a spoonful of ricotta cheese. Then garnish with a little more Parmesan cheese.
- Serve Lasagna Soup with favorite sides like side salad, broccoli, or green beans.

I made this for hubs and kids to take in their lunches (in thermos) this week. What a big hit. It tastes even better than it looks! We just finished dinner and the twins wanted a taste, then then a bowl full. Will definately make again!
P.S. We’ve been making a lot of yummy food from your cookbook. Each night the kids have started a thing where we add smiley faces to the pages in the book for the recipes we like. No kidding, there is not a frown face yet and we have been doing mostly your recipes in that book since the end of January. Each night they do a “thumbs up” and say add a smiley face Mommy, we want to have it again! I’ve enjoyed the savings. (We eat pretty stricly organic and dairy free so our recipes are more than $5 but with your coupon strategy its usually no more than $6-7 a meal and I’m spending no more than $75 a week for all organic meals!–We used to spend upwards of $200). Rice and veggies are very cheap, and stir fry cooking is so healthy, and tastes great. It’s amazing what a little ginger, garlic and spring onion will do.
I love this Italian dish as well. Cooking for cheap tastes great.

Thanks so much for sharing this recipe! I made it yesterday for myself and my husband (and tweaked it a bit to add fresh mushrooms, green pepper, and tomato we had in the house) and let it cook down to an almost hamburger helper consistency. This looks really easy to make. For some reason whenever a recipe calls for pasta sauce, I always want to add black olives! I really like that this will taste good with a variety of ground meats! I think I’ll be using regular ol’ ground beef! We have a surplus of that!
