Remember the Slow Cooker Beef Roast with Balsamic Onions?!?
Well, you should just bookmark it now and make it next time you have a beef roast on hand. Or better yet, toss it with some pasta and might I say you won’t regret it!
I used up a BOGO beef roast from the freezer, a yellow onion and some $.50/box pasta. Along with half of a $1 green pepper and a $.99 Romaine lettuce head with a homemade salad dressing for the salad.
Yum.

Slow Cooker Balsamic Beef and Onion Pasta
Ingredients
- Few drizzles of olive oil
- 1.3 lb beef roast
- 1 yellow onion, sliced
- 3-4 Tbsp balsamic vinegar
- Salt and pepper
- 1 lb penne pasta use rice pasta for GF meal
- 1/2 head Romaine lettuce
- 1/2 green pepper
- Homemade salad dressing
- 1 cup frozen peas
Instructions
- Drizzle some olive oil into the slow cooker and add the beef roast. Add the sliced onions and balsamic vinegar. Season with salt and pepper. Set on low and cook for 8 hours. Once cooked, pull/shred into bite size pieces.
- As the cooking time on the beef roast nears its end, cook the pasta according to package instructions. Drain and add to a large bowl.
- Toss the pasta with the beef pieces and onions. Add about 1/4 cup of the beef-balsamic broth from the slow cooker and toss with the pasta and beef.
- Prepare salad and dressing.
- Serve Balsamic Beef and Onions Pasta with side salad.

If I was following the recipe I would never have put the beef in. But I’m guessing it goes in with the onions.

I’m not too good with cuts of beef. Is beef roast typically what that is called? Just want to make sure because I’ve definitely bought beef that didn’t turn out how I thought it would:) Thanks for posting this, it sounds awesome!!

Why toss out the beef/balsamic broth??? Isn’t it delicious? Couldn’t you thicken it and serve it with the pasta and beef?

Totally meant to toss some of the juices with the pasta. I didn’t realize the way I wrote the directions that it also seemed as if I were suggesting you throw it away. I have clarified 🙂

This was soooo good! I added a little beef bullion at the end (took away a little of the tart) and it was great! My whole family loved it!

I notice that in the original post, you seared the roast before adding it to the slow cooker, but you don’t mention that step in this post. Did you skip it this time? Did it turn out just as well? I’m planning on making this and want to know if I can skip a step. Cause I’m lazy like that 😉

This looks so yummy! I am deep into a kitchen reno right now and am looking for meal ideas and the crock pot is going to be well loved by the end of it. I am also trying to eat from the Pantry and Freezer soooooo I think I will try this with pork tenderloin which means I would then have all these ingredients on hand. Gotta like that!
