It was one of those days. It started too early. It was filled with distractions. And a few schedule changes. And it left me in no mood to cook. Y’all have those days too, right?
There is but one option for dinner on a day like today. And no, it’s not take-out!
A one-dish, one-skillet dinner…straight from the pantry/freezer!
Sesame Chicken Stir-fry
A one-dish, one-skillet dinner...straight from the pantry/freezer!
Servings - 4 persons
Ingredients
- 2 cups cooked, shredded chicken
- 1 box Thai Kitchen Sesame Rice Noodles with seasoning
- 12 oz. frozen stir-fry vegetables
Instructions
- Follow the directions on the box to cook the rice noodles in a large skillet or wok, set aside once cooked.
- In the same large skillet or wok, stirfry the frozen vegetables, the cooked chicken and the seasonings in some oil. Add in the cooked rice noodles and stirfry for 3-4 more minutes.
- Serve Sesame Chicken Stir-fry.

I am gluten free and quite frankly, I think that using the Thai Kitchen noodles (with a coupon or sale) is probably cheaper than buying specialty pasta! I need to double check the bigger boxes, but many of the individual serving packages are GF.
I normally cook from scratch too, but sometimes we all need a little help and this looks yummy!

I don’t buy those Thai Kitchen noodles very often, but they’re a lifesaver when I do. There are gluten-free varieties, and they still come in cheaper than buying a prepared frozen product! Woohoo!

My Kroger store has them on the “Ethnic Aisle”…ask if your store carries the Thai Kitchen product line.

You could also substitute a couple of packages of ramen noodles, minus the seasonings! I make stir fry that way, with leftover turkey.

I know this is several months too late, but just a heads up, the Sesame Rice Noodles flavor from Thai Kitchen is *not* gluten free. They do make gluten free varieties you could substitute (which is what I’m trying) or you could try the seasoning substitutions making sure you use gf soy sauce.

If you use thin spaghetti instead of the Thai packaged noodles, how do you prepare? Prepare spaghetti as normal, drain than toss in skillet or something else?
