Making breakfast for dinner once a week is a SUREFIRE way to bring your weekly meal costs and your overall grocery bill down a bit! This dish would also be great for a brunch/potluck or weekend breakfast. Just double the recipe and make in a 9×13-inch baking dish.
If you’ve got milk, eggs, bread, the spices and some apples in the fridge, you should totally make this. Like right now.
Caramel Apple Breakfast Casserole
Ingredients
- 6 eggs ($.60)
- 1 cup milk ($.10) I used rice milk
- 1 tsp cinnamon ($.05)
- 1/4 tsp nutmeg ($.02)
- 4 medium or 3 large apples, ($1) On sale 4/$1 this week! peeled and diced
- 1/4 cup butter or margarine, melted ($.40) I used a dairy-free margarine
- 1/4 cup brown sugar ($.20)
- 1 tsp cinnamon ($.05)
- 6 slices of bread, torn ($.30)
- 1/2 Cantaloupe ($.75) On sale 2 weeks ago for $1.49!
- Syrup (optional...I thought it sweet enough and syrup unnecessary!)
- 6-8 Sausage Links or Turkey bacon ($1.49)
Instructions
- In a mixing bowl, whisk eggs, milk, cinnamon and nutmeg.
- Peel and dice the apples. In a smaller mixing bowl, combine melted butter, brown sugar and cinnamon. Toss with diced apples.
- In a greased 8×8-inch glass baking dish, tear 3 slices of bread and add to the bottom. Then add a layer of the diced caramel apples.
- Tear the other 3 slices of bread and spread on top of the apples.
- Pour egg/milk mixture into the baking dish. Cover with foil and let stand in the refrigerator for at least an hour (overnight, ideally!). Preheat oven to 350.
- Bake covered for 30 minutes, then uncover and bake another 15-20 minutes, or until eggs have cooked through.
- Serve Caramel Apple Breakfast Casserole with fresh fruit and sausage or bacon.

I have some teenaged girls over for a sleepover and I had them help me with this. We tasted the carmel apples before we covered them and they almost didn’t make it to the fridge!!!! I’m going to make this today, to bake tomorrow morning. It sure looks good! My picky teen DD “doesn’t like” apples baked into things, so if she ends up not liking it…more for me! On that note, do you think that individual (baked) portions can be wrapped & frozen to microwave later for a quick workday breakfast?

I halved this recipe for my two kids (ages 4 and 2) and myself for tonight’s supper. We ate it all up and the kids asked for more! I was out of brown sugar, too, but white worked just fine. YUMMY!

This was fantastic. I just finished it for dinner tonight. I did make several substitutions to save calories and it was still delicious! I figured out the whole dish as made is about 1900 calories and I made it for 1145 calories. Not that it was a high calorie meal to begin with, but I just like to cut it as much as possible. I used egg beaters, I can’t believe it’s not butter, splenda and 45 calorie bread (8 slices). It did take longer to cook, I might have needed more bread. Next time I’m going to add a bit of vanilla and a pinch of salt. Great recipe, thanks a lot!!! ~

Wow this looks great! I am doing weight watchers on-line and just put this through the recipe builder using an egg substitute and a low point bread. At 8 servings this only comes out to around 3 of them important things that I have to count!
