This was the perfect meal to come home to after an afternoon adventure/walk to the park! It was just cold enough outside to be chilly, but not so cold that we didn’t enjoy ourselves! Arriving home to this soup was lovely!
Warmed our tummies right up!
Here is the “doubled” version of the recipe! The total cost is not under $5…but since it is two meals worth…we divide by 2 and the overall cost is well below $5 per meal. The other half is going into the freezer!
A1 Beef Stew
Ingredients
- 2 Tbsp olive oil
- 1.7 lb. stew beef
- 10 cups water
- 4 large whole carrots peeled and diced
- 4 stalks celery diced
- 1 small white onion chopped
- 2 cups frozen Italian style green beans
- 15 oz. can diced tomatoes
- 2 tsp white vinegar
- 5 oz. bottle A1 steak sauce
- 2 cups brown rice
- Garlic toast side dish
Instructions
- In large pot, heat the oil. Add the stew meat and sear/brown on all sides to seal in the juices. Once the meat has browned, add 10 cups of water.
- Add the diced carrots, celery and onions. Stir in the green beans, diced tomatoes, vinegar and steak sauce. Finally, add the brown rice.
- Bring to boiling and then reduce heat and simmer for 1 hour, or until brown rice is tender.
- Serve A-1 Beef Stew with side of garlic toast.

This looks wonderful and something that my husband might really like also. I’m very envious of all the good “manager’s specials” you find on meat. I shop just after dropping my kiddos at school at Kroger and they don’t really have any good meat deals like you come up with.

Just to let everyone know, I usually hit several stores’ meat dept ‘s on Wed / Thurs because typically that’s when they mark down the weekend cuts. Perfectly good meat and half the price! Ask your local butcher when he marks down the weekends deals. They’re usually very nice about sharing that info! And be prepared to STOCK UP!

This looks so good! My 14-year-old son just informed me that he likes beef stew… after 14 years of refusing to touch anything that even remotely looks like stew or soup! I am definitely going to have to try this. Thanks for sharing.

Have you ever tried this in the crockpot? I’m trying to remember the rule of thumb for converting recipes to crockpot. I think it’s to cut the liquid in half, but I’m not sure about that. We are busy with soccer and dance 3 nights a week until 6:00 or 6:30, so I’m thinking that my crockpot needs to start getting a workout now that the weather is cooler!

I’d cut the liquid down a bit…half this recipe (cuz it won’t fit even in a large crockpot)…and add the rice in towards the end because otherwise it will swell too much and get mushy!

This sounds yummy…the crockpot makes it perfect for those days we have scouts and Taekwondo or even before the Friday night football game (heck toss it in a thermos and take it to the game on chilly nights).

OMG … so i am making this right now. I have it on the stove and simmering. I am thinking to myself looking at this large pot of stew thinking, “goodness, this is a lot of stew for one.” Cut to me looking at the directions and it specifically states “double batch”. So i have NO more room in freezer and have this yummy stew for an army. So it will be stew for breakfast, lunch, dinner and snacks !!!
Oh, i modified it a wee bit. I used one cup of brown rice and cut up one potato. I used red wine vinegar instead of white/rice … i am sure it will be ok.
