So I was NOT thinking clearly about the new dairy allergy when I wrote up my meal plan for the week and included pizza!
Hello, CHEESE!
So this pizza is cheeseless!
I thought it was fine without the cheese, as the BBQ and red onions gave it a rich flavor.
…still, there’s just something odd about a cheese-less pizza! lol
Of course, you could add a little shredded mozzarella, cheddar or combo of both to this pizza.
BBQ Chicken Pizza
This particular pizza is cheese-less, but feel free to add cheese!
Servings - 4 servings
Ingredients
- 2 chicken breasts cut into bite size pieces
- 1 cup BBQ sauce
- 1 large homemade or store bought pizza crust
- 1/2 large red onion chopped
- 2 crushed garlic cloves
Instructions
- Dice chicken breasts and pour 1 cup of BBQ sauce over the pieces. Marinate in the refrigerator for at least 30 minutes.
- Saute chicken pieces in skillet over medium high heat for 8-10 minutes, or until chicken has cooked through.
- Prepare homemade or store bought pizza dough as directed.
- Meanwhile, saute chopped red onions and garlic in 1 tsp olive oil for 4-5 minutes, or until onions become more opaque.
- Roll pizza crust onto pizza pan or baking stone. Top with 1/2 - 1 cup of BBQ sauce and spread around with spoon.
- Top with cooked diced chicken and sautéed red onions. Optional, top with 2 cups shredded mozzarella cheese!
- Bake at 400 F for 25 minutes, or as directed by crust recipe.
- Serve Homemade BBQ Chicken Pizza with favorite sides.

Mmmm…I love chicken pizza! I put red onion and mushrooms on mine…but I add cheese, too. 🙂

I make BBQ chicken pizza as well! I generally mix a couple of tablespoons of BBQ sauce with pizza sauce-really yummy. Then for toppings I cooked chicken and bacon tossed in BBQ sauce, sauteed red onion and green pepper, and pinapple (don’t knock it till you try it!). After topping with mozzerella, I drizzle additional BBQ sauce over the top for some extra flavor. It is the best!

I also have a dairy allergic kiddo and we have a Sunday night tradition of pizza night. We make 2 pizzas–one for hubby and I with the ‘real’ cheese and 1 for the girls with Tofutti “cheese”. It is not cheap, but I buy it by the case and the girls LOVE it. In fact, my non-dairy allergic girls prefer that to regular cheese pizza! Just a thought for you!

I am with you on not dirtying dishes! No dishwasher at this house, unless you count me! I usually marinate meat in zip top baggies (learned this trick from Rachael Ray!). I can put the meat in, the marinade, it covers all the meat, and no dirty dish!!

I’ve been visiting your site since I found it a couple of months ago & love your creativity in frugal cooking. I wanted to leave a couple of ideas for you as you eliminate dairy from your cooking. When I nursed my sons (ages 6 & 2), they had allergy issues with dairy, so I eliminated it completely from my diet for 5-6 months. Over time they have been able to tolerate it better so it’s not a problem now, but I remember what a challenge it was at that time. I also hosted a small group Bible study at my home for a time & one friend from that group had allergies to milk, chocolate, nuts & MSG. We tried to have things for our snacks we knew she would enjoy also. All of that said, a few of the favorite desserts (because I’m a dessert girl!) I enjoyed were rice krispie treats (peanut butter in these is also good!), homemade angel food cake (a family favorite!), apple krisp or pie & some cakes. There are some cake mixes with no milk (to know for sure, look at the front of the cake mix, lower right corner & if there’s a “D” it DOES have Dairy in it) I believe Duncan Hines is the brand that’s dairy free. Something else my friend from Bible Study was able to eat is Cool Whip. (that surprised me!) If you are ever wanting to do a big splurge (not a $5 dinner), Papa John’s pizza also has no milk in their crust. I called around to many places & they were the only ones I found that had no dairy in the crust. (so you could do a cheeseless pizza there like your BBQ chicken pizza–it’s really delicious! I didn’t miss the cheese a bit!) Thanks for the great website. Can’t wait to check out your book!

Never posted her before, but I wanted to tell you that there’s a book called The Ultimate Uncheese Cookbook by Jo Stepaniak, with recipes for making your own cheese using ingredients such as nutritional yeast (hello, natural foods store). It’s cheaper but more time consuming than purchasing premade vegan cheese. Also, check out vegan cookbooks and blogs for dairy-free recipes. If you’re going GFCF, there are a lot of great websites out there from people who are also on a budget — but it can be an expensive diet. We were GFCF for 2 years for my daughter who has Asperger’s Syndrome, it did help a bit, but she was tired of standing out at lunchtime, so we returned gluten to her diet. I have tons of recipes if you want to email me.

we usually grill extra bbq chicken just so we will have leftovers to make bbq chicken pizza and any veggie we have on hand, especially mushrooms.

At what temperature do you bake the pizza at and for how long? Is it the same as other pizzas?

350 for 10-15 minutes…until dough cooks through and all cheese melts!
