Easy “One Dish Dinner” Made in the Slow Cooker – BBQ Chicken with Sweet Potatoes and Corn, Plus a Cornbread Topping
Tonight’s meal is based on this recipe from A Year of Crockpotting! I threw it all in the crockpot as the boys were eating lunch and put the crockpot outside on the patio to cook for the afternoon. Worked like a charm. Didn’t have to smell it cooking all day and was able to enjoy it for dinner. Because “I didn’t cook it!” Thanks for this great tip Lynn!
(From 2009) About the ingredients…chicken tenderloins were on sale $1.78/lb last week. I had a sweet potato left from the pre-Easter sale ($.49/lb) and found a MONSTER bottle of BBQ sauce that was on sale for $1! There was quite a bit of BBQ sauce leftover in the bottle after I poured out 2 cups worth!
Slow Cooker BBQ Chicken and Cornbread Casserole
Ingredients
- 1.3 lb. package of chicken tenderloins
- 12 oz. bag frozen corn
- 3 small sweet potatoes
- 2 cups BBQ sauce
- 2 boxes Jiffy cornbread mix
- 2 large eggs
- 2/3 cup milk
Instructions
- Spray bottom of slow cooker with cooking spray. Dice chicken tenderloins into bite size pieces and place them in the bottom of the slow cooker.
- Peel and dice sweet potato into 1/2-inch cubes. Add to slow cooker and mix in with the chicken and corn.
- Pour bottle of BBQ sauce over the mixture in the slow cooker. Add about 1/4 cup of water and stir through. *If your slow cooker "runs hot" and tends to overcook or burn BBQ sauce, add 1/2 cup of water.
- In a small mixing bowl, prepare Jiffy cornbread mixes as directed on box and pour over the top of the BBQ chicken mixture.
- Set to low and cook for 6 hours.
- Serve BBQ Chicken Cornbread Casserole. This is a great one dish dinner!

This looks great! I have a dumb question- do you think Jiffy corn MUFFIN mix would work instead of the bread mix? I was able to pick up 4 of the muffin mixes for $.25/each last week at Acme!

i know this is a ridiculously old comment but id figure id answer it for anyone thats still looking this up. yes you can use the corn muffin mix, it isnt any different than the bread mix, just has instructions for muffins instead of bread from what it seems.

When you are figuring out the prices of your dinners, how do remember what everything costs? Do you use the typical cost you pay for something (say a can of corn) even if you may have bought it at it lowest killer sale price? Do you keep a list of prices? How about spices or staples (sugar, flour, etc.). You may have covered this in the past, but I’m a fairly new reader. 🙂

I use the price I actually pay for the product. I buy EVERYTHING on sale! If I’m not sure I’ll remember the price, I’ll write it on the can or package. Meats have the price on the package, so that’s easy. And my brain just remembers numbers well 🙂

That looks delicious! And I love the idea of sitting the crock pot outside when it’s warm out. I have the same problem of often not being able to eat what I cook. Not so much with dinners, although sometimes that’s the case, but more often when we entertain or it’s a big undertaking. Great tips!

Quickie question! Would you suggest making the recipe above using 2 boxes of cornbread mix? Also, do you think there was too much bbq sauce in the recipe? (ie. would you keep as it or cut it down?) Gonna try this one. 🙂

That looks yummy, but I have a crockpot dilemma. Sooo many recipes call for 6 hours. How do working people leverage the power of the crockpot when we’re out of the home for 9? It seems to defeat the purpose to use it on the weekends when I can tend to it.

I would think you could set this to low for 8-10 hours.

If your crockpot does not have a timer on it, you can go to any home store, Home Depot, Lowes, even Wal-Mart, and buy a light timer for about 5 dollars… Plug it in, set the time you want it to turn on, set your crockpot to low and plut it into the timer. Instant upgraded crockpot.

Jennifer– I’m also a full-time working mom and I’m out of the house at 8 a.m, home at 5:30 p.m. five days a week. I agree with you that a lot of recipes are difficult for 9 hours in the crock pot! I always set mine on low, but I’m thinking that pretty soon I REALLY need to get an “updated” crockpot with a timer. 🙂 I’m making this recipe soon, so I’ll let ya know what happens! P.S.: I use those crockpot liners since the crockpot is on for so long and things like to “stick” to it sometimes!

I had cooked a whole chicken earlier in the week in the crock pot. This was a great use for almost half of the pre-cooked chicken. Two boxes of cornbread worked great, however I put it on high for about 5 hours until the cornbread was cooked through. I used less BBQ sauce and it was drier than your picture, but we liked it. I wonder about using some of the cornbread on the bottom, but I don’t do many crock-pot meals to know if that’s feasible.

Great recipe, thanks! We actually did make it with 2 boxes of Jiffy, and we felt like it was too much cornbread. Also, the cornbread was not completely cooked through at 6 hours. Otherwise – we loved it! My husband even had seconds!

Made this with a different cornbread mix that called for oil and it did not cook all the way thru. Some of the sweet potatoes were still hard and the cornbread was still soft and liquidy. I timed it right for dinner time and could not wait longer than the 6 hour period to let it cook further. I remedied the situation by taking off the cornbread mix and putting it in the oven to finish cooking. The flavor was there, but the presentation was not. What could have gone wrong?

omitted the sweet potato, but used everything else it called for. sweet baby rays honey bbq sauce was amazing for this and it really brought it all together. this has to have been the best thing ive ever made in the slow cooker. the only part that went just a little wrong was that about 1/3rd of the cornbread was soggy, though after leaving the top off the crockpot for like 15 minutes, it seemed to dry out the soggy spots and made it pretty uniform throughout.
