Rice and Beef Skillet Casserole
A tasty and easy budget friendly meal!
Servings - 4 servings
Ingredients
- 1 cup rice
- 1/2 onion
- 3/4 lb ground beef
- 15 oz can of diced tomatoes
- 1 tsp Italian seasonings
- 1 tsp garlic powder
- Salt and pepper, to taste
- 4-6 oz Mexican blend shredded cheese
- 1 bag baby spinach
Instructions
- Bring 2.5 cups of water to boil. Add 1 cup of rice. Return to boil. Stir and reduce heat to medium low. Cover and cook for 20 minutes.
- Chop onion and put in skillet. Add 3/4-1 lb ground beef. Brown the beef with the onion. Drain and rinse, if you prefer.
- Return meat/onion mixture to skillet. Set heat to medium-low. Add 1 can of diced tomatoes. Add Italian seasonings, garlic powder, salt and pepper to taste. Cook for about 5-7 minutes to allow flavors to mingle.
- Once rice has finished cooking, add to meat/onion/tomato mixture in the skillet. Mix well.
- Shred 4-6 oz of sharp cheddar cheese (or other favorite!). Sprinkle over the top of the rice/meat mixture in the skillet. Set to cook on low for about 5 minutes, giving cheese time to melt!
- Steam spinach in steamer for 4-5 minutes, until soft and tender.
- Serve Rice and Beef Skillet Casserole with side of steamed spinach!

Chicken and Rice
1lb. boneless, skinless chicken breasts- cut in fourths (on sale $1.99/lb)
1 can cream of chicken soup – I use 98% ff (about $0.80)
6 servings of brown rice (or white- instant or regular) (about $0.75)
1 bag of frozen broccoli florets ($1.25)
Mix soup with 1/2c. water
Spray crock pot with nonstick spray
Add chicken
Pour soup over chicken
Cook on low for 6 hours
Serve over rice with a side of steamed broccoli.

Thanks for featuring my recipe! We had it on Saturday night and ate leftovers for lunch today. The spinach side is a great idea. I’ve also cut up the spinach and added it to the beef/onions just as I am finishing cooking them and included it in the casserole.

I thought about throwing the spinach in with the casserole, but ended up steaming it! I made this last week (when the site was host hopping!) and did it in a casserole. Doing it in the skillet was a little experiment…saved me 1 dish! We loved this and will have it again!!!

I have a similiar reciepe…
cook in skillet with some oil..
1 diced green pepper (although I’ve used red, and yellow too!)
2 cloves garlic
1 diced onion
1 diced jalepeno
add that mixture to….
1 cup cooked rice
1 drained can kidney beans
1 not drained can diced tomatoes
warm to your taste buds and enjoy! Add meat if you like!

We had this for dinner tonight and it was very good.
I did not have plain diced tomatoes so I added a can of diced tomatoes and green chilies. I also fried some corn tortillas to eat this as tacos. Some of us had the tacos and some didn’t. My 5 and 3 yr old like this a lot also.
