Lentil Burritos
Lentil Burritos - the ultimate rice and beans budget recipe! This ultra affordable recipe is made up of rice, lentils, and other affordable ingredients.
Servings - 4 servings
Ingredients
- 1 cup rice uncooked
- 1 cup green lentils uncooked
- 1/2 onion finely chopped
- 8 oz. can tomato paste
- 2 Tbsp homemade taco seasoning
- 8 small flour tortillas
- 1 cup shredded cheese
- Salsa or sour cream garnish
- 2 cups frozen corn side dish
Instructions
- Bring 2 1/4 cups of water to a boil. Add 1 cup of rice. Return to boil. Then reduce heat, cover and simmer 20 minutes until rice is done.
- Bring 4 cups of water to a boil. Add 1 cup lentils. Cook lentils in 4 cups of water for 20-30 minutes until tender. Drain off excess water.
- Combine cooked rice and lentils in large saucepan. Add tomato paste + 2 tomato paste cans worth of water. Stir through.
- Add onions, seasoning packet or spices. Let simmer about 10 minutes. Check on it to make sure it doesn't get too "dry".
- Spoon lentil-rice mixture into tortilla. Add shredded cheese. Wrap up burrito style!
- Cook frozen corn as directed. Serve as side dish or inside the burrito.

One more thing-you mentioned prices a few days ago-and that you live in the Midwest. I can almost always get milk at Dominicks for $1.99 a gallon. Just thought I’d pass that along.

I wish I could get my kids to like burritos. So far they like tacos, tostadas and nachos, the burrito thing is slow going. I thing I will make these anyway though, I love lentils!

We tried this last night and everyone LOVED it! We also used one of Paces Specialty Sauces recently on sale with a coupon. It was the 4-Cheese Mexican Cheese Sauce. I like this one because it has no meat, & is a complete protein without a lot of carbs. I have a problem most of the recipes here because they require cheap grades of meats from farm abused animals who are very sickly and dosed heavily with antibiotics I refuse to feed our family. Even my dogs only eat from the Whole Foods humanely raised standards without the drugs. I feel the same way about some of the dairy here, but it is just a few cents more per meal to get organic but way worth it. Otherwise great site, lots of great tips & glad you are into alternatives for food allergies, just wish this were practical for me.
